Crepes Preparation

    Make the Crepe Batter

    In a mixing bowl, whisk together the flour and salt. In another bowl, beat the eggs and then mix in the milk and melted butter. Gradually combine the wet ingredients into the dry ingredients and whisk until smooth. Let the batter rest for 30 minutes.

    Cook the Crepes

    Heat a non-stick skillet over medium heat and lightly grease with butter. Pour a ladle of batter into the skillet and swirl to cover the bottom evenly. Cook for 1-2 minutes until the edges lift and the crepe is lightly browned. Flip and cook for another minute. Repeat with remaining batter.

    Cook the Meat Filling

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add ground beef, veal, and pork, and cook until browned. Stir in chopped parsley, salt, and black pepper. Remove from heat and let cool.

Sauce Preparation

    Make the Crema-Rosa Sauce

    In a saucepan, combine heavy cream, tomato sauce, salt, and dried basil. Simmer over low heat for 10 minutes, stirring occasionally. Stir in grated Parmesan cheese until melted and well combined.

    Make the Bechamel Sauce

    In a separate saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes. Gradually whisk in milk, cooking until thickened. Season with salt and nutmeg, then stir in grated mozzarella cheese until melted.

Assembly and Baking

    Assemble the Cannelloni

    Preheat your oven to 180°C (350°F). Take a crepe and place a spoonful of the meat filling at one end. Roll the crepe tightly and place it seam-side down in a baking dish. Repeat with remaining crepes and filling.

    Add the Sauces

    Pour the crema-rosa sauce evenly over the assembled cannelloni. Drizzle the béchamel sauce on top, then sprinkle grated mozzarella and Parmesan cheese over the entire dish.

    Bake

    Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly. Remove from oven and let rest for a few minutes before serving.
