Method
Preparation of Salmon

Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Salmon
Season the salmon fillets with salt and black pepper on both sides.

Coat with Egg
Dip each seasoned salmon fillet into the beaten egg, coating it well.

Crust with Almonds
Press the chopped almonds onto the top of each salmon fillet to create a crust.
Cooking the Salmon

Bake the Salmon
Place the salmon fillets on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the almonds are golden brown.

Sauté Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Mix Ingredients
In a small bowl, whisk together the orange juice, lemon juice, honey, olive oil, salt, and black pepper until well combined.
Serving

Plate the Dish
On a serving plate, arrange the sautéed vegetable medley. Place a piece of almond-encrusted salmon on top. Drizzle with the citrus vinaigrette before serving.
