Method

Preparation Instructions

  1. 1

    Activate the Yeast

In a small bowl, combine warm milk, warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Make the Dough

In a large mixing bowl, combine flour and salt. Create a well in the center and add the yeast mixture. Mix until a dough forms.

  3. 3

    Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.

  4. 4

    Prepare the Butter

While the dough is rising, place the cold butter between two sheets of parchment paper. Roll it out into a rectangle about 1/2 inch thick and refrigerate.

  5. 5

    Incorporate Butter

Once the dough has risen, roll it out into a large rectangle. Place the chilled butter in the center and fold the dough over it, sealing the edges.

  6. 6

    Roll and Fold

Roll out the dough into a long rectangle, then fold it into thirds (like a letter). Wrap in plastic wrap and refrigerate for 30 minutes. Repeat this rolling and folding process 3 times.

  7. 7

    Shape the Croissants

After the final fold, roll the dough into a large rectangle. Cut it into triangles and roll each triangle from the base to the tip.

  8. 8

    Proof the Croissants

Place the shaped croissants on a baking sheet lined with parchment paper. Cover and let them rise for about 1 hour.

  9. 9

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  10. 10

    Egg Wash and Bake

Brush the croissants with the beaten egg. Bake for 15-20 minutes or until golden brown.

  11. 11

    Cool and Serve

Remove from the oven and let cool on a wire rack before serving.
