Cook the spaghetti
Bring a large pot of salted water to a boil. Add the fresh spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

Prepare the bacon and onion
In a large skillet over medium heat, add the imported bacon. Cook until crispy, about 5-7 minutes. Add the chopped onion and cook until softened, about 3-4 minutes.

Add peas and cream
Stir in the sweet peas and cook for 2 minutes. Then pour in the cream and bring to a gentle simmer.

Combine spaghetti and sauce
Add the drained spaghetti to the skillet with the sauce. Toss to combine, adding reserved pasta water as needed to reach desired consistency.

Finish with cheese and seasoning
Remove from heat. Grate the Pecorino cheese over the pasta, add black pepper to taste, and toss again until well combined.

Plate the carbonara and garnish with additional Pecorino cheese and black pepper if desired. Serve immediately.
