Preparation Instructions

  1. 1

    Prepare the Asparagus

Trim the ends of the asparagus and blanch them in boiling water for 2-3 minutes until bright green and tender. Immediately transfer to an ice bath to stop the cooking process.

  2. 2

    Toast the Pine Nuts

In a dry skillet, toast the pine nuts over medium heat for about 3-4 minutes until golden brown, stirring frequently to prevent burning.

  3. 3

    Prepare the Goat Cheese

Preheat the oven to 350°F (175°C). Place the goat cheese rounds on a baking sheet and bake for 10 minutes until warm and slightly melted.

  4. 4

    Assemble the Salad

In a large bowl, combine mixed greens, blanched asparagus, toasted pine nuts, and torn prosciutto. Drizzle with olive oil, balsamic vinegar, salt, and pepper. Toss gently to combine.

  5. 5

    Serve

Divide the salad onto plates and top with the warm goat cheese. Enjoy!
