1. Prepare the Cake Layers

Preheat your oven to 350°F (175°C). Grease and line two 9x13-inch baking pans with parchment paper. In a large bowl, whisk together the almond flour, all-purpose flour, and granulated sugar. In another bowl, beat the eggs until frothy, then incorporate the melted butter, brewed coffee, coffee liqueur, and vanilla extract. Gradually combine the wet and dry ingredients until smooth.

2. Bake the Layers

Divide the batter evenly between the prepared pans. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely in the pans.

3. Make the Coffee Syrup

In a small saucepan, combine 1/2 cup of brewed coffee and 1/4 cup of granulated sugar. Heat over medium heat until the sugar dissolves. Remove from heat and let cool.

4. Assemble the Cake

Once the cakes are completely cooled, carefully remove them from the pans. Slice each cake horizontally to create four layers. Place one layer on a serving platter, brush generously with the coffee syrup, and spread a layer of chocolate ganache on top. Repeat the process with the remaining layers, finishing with a layer of ganache on top. Chill the assembled cake in the refrigerator for at least 2 hours before serving.

5. Serve
