    Preheat the Oven

    Preheat your oven to 375°F (190°C) and grease ramekins with butter, dusting with sugar.

    Prepare the Souffle Base

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes until lightly golden.

    Make the Roux

    Slowly whisk in the milk, stirring constantly until the mixture thickens. Remove from heat.

    Add Flavoring

    In a separate bowl, beat the egg yolks with sugar until pale and fluffy. Stir in the vanilla and selected flavoring (Grand Marnier, melted chocolate, or raspberry purée). Combine with the roux.

    Whip Egg Whites

    In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.

    Fold and Combine

    Gently fold the whipped egg whites into the soufflé base in three additions, being careful not to deflate the mixture.

    Bake the Soufflé

    Pour the mixture into the prepared ramekins and bake for 20-25 minutes until puffed and golden. Serve immediately.
