    Prepare the Butternut Squash

    In a medium pot, boil the diced butternut squash in salted water until tender, about 10 minutes. Drain and set aside.

    Cook the Gnocchi

    In the same pot, bring water to a boil and add the potato gnocchi. Cook until they float to the surface, about 2-3 minutes. Drain and set aside.

    Prepare the Sea Bass

    Preheat the oven to 400°F (200°C). Season the sea bass fillets with salt and black pepper. Press the chopped pecans onto the top of each fillet to create a crust.

    Bake the Sea Bass

    In an oven-safe skillet, heat olive oil over medium-high heat. Sear the fillets, pecan-side down, for 2-3 minutes until golden. Flip the fillets and transfer the skillet to the preheated oven. Bake for 8-10 minutes until the fish is cooked through.

    Make the Chardonnay Sauce

    In a saucepan, combine the chardonnay wine and bring to a simmer. Reduce by half, then add the heavy cream. Simmer until thickened, about 5 minutes. Stir in salt and pepper to taste.

    In a large mixing bowl, combine the butternut squash and gnocchi. Drizzle with olive oil and gently mix. Serve the crusted sea bass on a plate, alongside the butternut squash and gnocchi, and drizzle with the chardonnay sauce. Garnish with fresh chives.
