    Prepare the Pommes Frites

    Peel and cut the potatoes into thin strips. Rinse them in cold water to remove excess starch. Soak the fries in cold water for at least 30 minutes, then drain and dry them thoroughly.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels. Season with salt while hot.

    Cook the Flat Iron Steak

    Season the flat iron steak with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Remove from skillet and let rest for a few minutes.

    Make the Sauce

    In the same skillet, add the chopped shallots and cook until softened. Carefully add the cognac and scrape up any browned bits. Add the peppercorns and heavy cream, bringing the mixture to a simmer. Stir in the butter until melted and combine well.

    Slice the steak against the grain. Serve with the pepper cognac sauce drizzled on top and a side of pommes frites.
