Prepare the Cream Mixture
In a saucepan, heat the heavy cream and 1/2 cup of granulated sugar over medium heat until it begins to simmer. Remove from heat and stir in the vanilla extract.

Whisk the Egg Yolks
In a mixing bowl, whisk together the egg yolks and the remaining 1/2 cup of sugar until the mixture becomes pale and thick.

Combine Mixtures
Slowly pour the hot cream mixture into the egg yolk mixture while continuously whisking to temper the yolks.

Add Raspberries
Gently fold in the fresh raspberries into the mixture.

Remove the ramekins from the water bath and let them cool at room temperature. Once cooled, cover and refrigerate for at least 4 hours or overnight.

Before serving, sprinkle a thin layer of brown sugar on top of each custard. Use a kitchen torch to caramelize the sugar until it forms a golden crust.
