Terrine Ingredients

Method

Preparation Directions

  1. 1

    Prepare the Mixture

In a large bowl, combine the ground pork, chicken liver, and chopped bacon. Mix well.

  2. 2

    Add Aromatics

Stir in the chopped onion, minced garlic, fresh thyme, salt, black pepper, and nutmeg into the meat mixture.

  3. 3

    Incorporate Eggs and Cream

Beat the eggs in a separate bowl and add them along with the heavy cream to the meat mixture. Mix until well combined.

  4. 4

    Fold in Nuts and Herbs

Gently fold in the chopped pistachios and parsley into the mixture.

  5. 5

    Prepare the Terrine Dish

Preheat the oven to 160°C (320°F). Grease a terrine mold or loaf pan with butter, and line it with parchment paper.

  6. 6

    Fill the Mold

Pour the mixture into the prepared terrine mold, pressing it down gently to remove any air pockets.

  7. 7

    Bake

Cover the terrine with aluminum foil and place it in a water bath. Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 70°C (160°F).

  8. 8

    Cool and Serve

Remove from the oven and let it cool completely in the mold. Once cooled, refrigerate for at least 4 hours before serving. Slice and serve cold.
