Preparation

    Prepare the fennel

    Thinly slice the fennel bulb and set aside.

    Prepare the watermelon

    Cut the watermelon into small cubes or balls using a melon baller.

    Prepare the edamame

    If using frozen edamame, cook according to package instructions, then drain and set aside.

Cooking

    Cook the salmon

    In a skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and black pepper. Place the salmon in the skillet and cook for about 4-5 minutes on each side or until cooked through.

    Combine flavors

    In a large bowl, combine the cooked edamame, fennel slices, and watermelon. Drizzle with yuzu koshu and toss gently to mix.

Plating

    Serve

    Place a portion of the watermelon, edamame, and fennel mixture on each plate. Top with the cooked salmon fillet. Drizzle any remaining yuzu koshu over the top and serve immediately.
