Croquette Preparation
1. Prepare the Salt Cod
Soak the salt cod in water for 24 hours, changing the water several times. After soaking, drain and rinse the cod, then boil it in fresh water for about 15 minutes until cooked. Flake the fish and set aside.
2. Cook the Potatoes
Peel and boil the potatoes until tender. Mash them and let them cool.
3. Mix Ingredients
In a large bowl, combine the flaked salt cod, mashed potatoes, chopped onion, minced garlic, beaten egg, chopped parsley, and black pepper. Mix well until combined.
4. Form the Croquettes
Shape the mixture into small oval or round croquettes. Dredge each croquette in flour, then dip in beaten egg, and finally coat with breadcrumbs.
5. Fry the Croquettes
In a large frying pan, heat the vegetable oil over medium heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
