Prepare the Leeks
Clean and slice the leeks into thin rounds. Rinse them well to remove any dirt.

Cook the Leeks
In a large skillet, heat the olive oil over medium heat. Add the leeks and sauté for about 5-7 minutes until they are soft and slightly caramelized.

Add the Mackerel
Reduce the heat to low and add the mackerel fillets to the skillet. Cook for an additional 5 minutes, allowing the mackerel to warm through.

Make the Sauce
In a small bowl, mix the Dijon mustard with the anchovy fillets, mashing them together until smooth. Stir in a tablespoon of water to thin it out if necessary.

Combine and Season
Pour the mustard and anchovy mixture over the mackerel and leeks. Gently toss to coat everything evenly. Season with salt and black pepper.
