Spinach Burrito

Spinach Burrito

    Prepare the filling

    In a skillet, heat olive oil over medium heat. Add fresh spinach and sauté until wilted. Add black beans and cooked brown rice, and stir to combine. Season with salt and pepper to taste. Remove from heat.

    Assemble the burrito

    Lay a flour tortilla flat and spoon some of the spinach mixture into the center. Add a dollop of sour cream and a sprinkle of shredded cheese. Fold in the sides of the tortilla and then roll it up tightly from the bottom. Repeat with remaining tortillas.

    Cook the burrito

    Heat a skillet over medium heat. Place the burrito seam side down and cook for about 3-4 minutes on each side until golden brown and crispy. Remove from skillet and set aside.

Rice and Mushroom Quesadilla

    Prepare the filling

    In the same skillet, add olive oil and sauté minced garlic until fragrant. Add sliced mushrooms and cook until they are soft. Mix in cooked brown rice, and season with salt and pepper to taste. Remove from heat.

    Assemble the quesadilla

    On one half of a flour tortilla, layer the mushroom and rice mixture followed by shredded cheese. Fold the other half of the tortilla over the filling.

    Cook the quesadilla

    Heat the skillet over medium heat again. Place the quesadilla in the skillet and cook for 3-4 minutes on each side until the tortilla is golden and the cheese has melted. Remove from skillet and cut into wedges.
