Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a large bowl, combine olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper. Mix well.

  2. 2

    Marinate the Chicken

Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

Grilling the Chicken and Vegetables

  1. 3

    Preheat the Grill

Preheat the grill to medium-high heat.

  2. 4

    Grill the Chicken

Remove chicken from the marinade and place it on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Once cooked, let it rest for 5 minutes before slicing.

  3. 5

    Prepare Vegetables

In a bowl, toss the sliced bell peppers, zucchini, and red onion with olive oil, salt, and black pepper.

  4. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill and cook for about 5-6 minutes, turning occasionally until they are tender and slightly charred.

Taco Assembly

  1. 7

    Warm the Tortillas

In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

  2. 8

    Assemble the Tacos

To assemble, place sliced grilled chicken and vegetables onto each tortilla. Top with chopped cilantro, avocado slices, and a dollop of sour cream.

  3. 9

    Serve

Serve tacos with lime wedges on the side for squeezing over the top.
