Method

Bean Burrito

    Prepare the Burrito

    In a large flour tortilla, spread the refried beans evenly across the center. Add sliced jalapeños and a dollop of sour cream on top.

    Roll the Burrito

    Fold the sides of the tortilla over the filling and roll it tightly from the bottom to the top.

    Heat the Burrito

    Place the burrito seam side down in a skillet over medium heat for about 2-3 minutes until golden brown. Flip and brown the other side.

    Add Nacho Cheese

    Drizzle the warm nacho cheese sauce over the burrito before serving.

Cheese Enchilada

    Prep the Tortillas

    Preheat the oven to 350°F (175°C). In a skillet, heat the enchilada sauce until warm.

    Fill the Tortillas

    Take a corn tortilla, dip it in the warm enchilada sauce, place shredded cheese and chopped onions inside, and roll it up.

    Bake the Enchiladas

    Place the filled enchiladas seam side down in a baking dish. Pour remaining enchilada sauce over the top and sprinkle additional cheese. Bake for 15-20 minutes.

Cheese Quesadilla

    Prepare the Quesadilla

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Place one large flour tortilla in the skillet.

    Add Cheese

    Sprinkle half of the shredded cheese evenly over the tortilla.

    Cook the Quesadilla

    Top with another tortilla, pressing down gently. Cook for 2-3 minutes until the bottom tortilla is golden, then flip and cook until the other side is golden brown and the cheese has melted.

    Cut and Serve

    Remove from the skillet, let cool for a minute, then cut into wedges and serve with salsa or additional cheese.
