Bean Burrito

Prepare the beans
In a saucepan, heat the refried black beans over medium heat until warm. Season with salt and black pepper to taste.

Warm the tortillas
In a dry skillet over medium heat, warm the flour tortillas for about 30 seconds on each side until pliable.

Serve
Cut the burrito in half and serve with a dollop of sour cream on the side.

Preheat oven
Preheat your oven to 350°F (175°C).

Prepare the tortillas
In a skillet, heat the cooking oil over medium heat. Lightly fry the corn tortillas for about 10 seconds on each side to make them pliable.

Fill the tortillas
Spread a small amount of enchilada sauce on the bottom of a baking dish. Fill each tortilla with shredded cheese, roll them up, and place seam-side down in the dish.

Top with sauce
Pour the remaining enchilada sauce over the rolled tortillas. Sprinkle with additional shredded cheese and chopped green onions.

Bake in the preheated oven for 20 minutes or until the cheese is bubbly and golden.
