Marinade Preparation

    Prepare the Chiles

    Remove the stems and seeds from the guajillo and ancho chiles. Place them in a small saucepan with enough water to cover them, and boil for about 10 minutes until they are soft.

    Make the Marinade

    Drain the chiles and transfer them to a blender. Add the pineapple juice, garlic, cumin, oregano, salt, black pepper, white vinegar, and sugar. Blend until smooth.

    Marinate the Pork

    Cut the pork shoulder into chunks and place it in a large bowl. Pour the marinade over the pork, ensuring all pieces are coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat your grill or a skillet over medium-high heat. Remove the pork from the marinade, shaking off excess. Grill or sear the pork for about 15-20 minutes, turning occasionally until cooked through and caramelized on the outside.

    Once cooked, remove the pork from the heat and let it rest for 10 minutes before slicing it thinly.

Assembling the Tacos

    Prepare the Tortillas

    Warm the corn tortillas on the grill or in a skillet until they are pliable.

    Assemble the Tacos

    Place a portion of the sliced pork on each tortilla. Top with diced pineapple, chopped cilantro, and diced onion. Serve with lime wedges on the side.
