Dough Preparation

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well blended.

Incorporate Lard
Add the lard or vegetable shortening into the dry ingredients. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

Add Water
Gradually add the warm water to the mixture, stirring until a soft dough forms. You may need to adjust the water slightly based on humidity.

Knead the Dough
Turn the dough out onto a lightly floured surface and knead for about 2-3 minutes until smooth. Cover the dough with a towel and let it rest for at least 30 minutes.

Roll out the Dough
After resting, divide the dough into 8 equal pieces. Roll each piece into a circle about 1/8 inch thick.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Sopapillas
Carefully place one or two dough circles into the hot oil. Fry for about 1-2 minutes on each side or until they puff up and turn golden brown. Remove with a slotted spoon and drain on paper towels.

While the sopapillas are frying, melt the butter in a small saucepan. In a separate bowl, combine the honey and ground cinnamon.
