Prepare the Poblano Pepper
Roast the poblano pepper over an open flame or under a broiler until the skin is charred and blistered. Once roasted, place the pepper in a plastic bag for about 10 minutes to steam, then peel off the skin, remove the seeds, and dice it into small pieces.

Cook the Chorizo
In a skillet over medium heat, add the chorizo sausage and cook for about 5-7 minutes until it is fully cooked and browned. Break it up with a spatula as it cooks. Once cooked, remove from heat and set aside.

Combine Ingredients
In a baking dish or a skillet, layer the cooked chorizo, diced poblano pepper, and shredded Oaxaca cheese evenly.

Melt the Cheese
Place the dish in the oven and broil on high for about 5-7 minutes, or until the cheese is melted and bubbly. Keep an eye on it to prevent burning.

Serve the Queso Flameado
Remove the queso flameado from the oven and let it cool for a minute. Serve hot with the flour tortillas on the side. Optionally, garnish with fresh cilantro, a dollop of sour cream, and sliced jalapeños.
