Preparing the Chicken

    Marinate the Chicken

    In a bowl, combine olive oil, lime juice, cumin, paprika, salt, and black pepper. Add the chicken breasts and coat them well. Cover and marinate for at least 30 minutes.

    Grill the Chicken

    Preheat a grill or grill pan over medium heat. Grill the marinated chicken breasts for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from grill and let cool before slicing.

Preparing the Vegetables

    Sauté the Vegetables

    In the same grill pan, add a little olive oil if necessary. Sauté the diced bell peppers and onion over medium heat for about 5-7 minutes until they are tender and slightly caramelized.

Assembling the Quesadillas

    Prepare the Quesadillas

    Lay a tortilla on a flat surface. Sprinkle a layer of cheddar cheese, followed by sliced grilled chicken, sautéed vegetables, and another layer of cheese on top. Place another tortilla over the filling.

    Cook the Quesadillas

    Heat a non-stick skillet over medium heat. Carefully place the filled tortilla in the skillet. Cook for about 3-4 minutes on each side or until the tortillas are golden brown and the cheese has melted. Repeat with remaining tortillas.

Cooking the Rice

    Cook the Rice

    In a medium pot, combine the rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and the water is absorbed. Fluff with a fork before serving.
