Quesadilla Preparation

    Prepare the Filling

    In a mixing bowl, combine the cooked chicken (or chosen meat) with shredded cheese. Mix well to ensure the cheese is evenly distributed.

    Assemble the Quesadilla

    Heat a non-stick skillet over medium heat. Place one flour tortilla on the skillet. Spoon half of the filling onto one half of the tortilla. Fold the other half over the filling.

    Cook the Quesadilla

    Drizzle 1 tablespoon of olive oil around the edges of the quesadilla. Cook for about 3-4 minutes or until the bottom is golden brown. Carefully flip the quesadilla using a spatula and cook the other side for an additional 3-4 minutes until golden and the cheese is melted.

    Repeat for Remaining Quesadilla

    Repeat the process with the remaining tortillas and filling to make a total of two quesadillas. Use the remaining olive oil as needed.

    Slice and Serve

    Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges and serve warm.
