Preparation of Filling

    Cook the Vegetables

    In a skillet, heat the olive oil over medium heat. Add the sliced bell pepper and onion. Sauté for about 5-7 minutes until softened. Season with salt, black pepper, and cumin.

    Combine Filling Ingredients

    In a bowl, combine the sautéed vegetables with the cooked chicken or beef and shredded cheese. Mix well to ensure an even distribution of ingredients.

Cooking the Quesadilla

    Assemble the Quesadilla

    Place one flour tortilla on a clean surface. Spread half of the filling mixture on one half of the tortilla, then fold the other half over the filling.

    Cook the Quesadilla

    In the same skillet, add a little more olive oil if necessary and heat over medium heat. Carefully place the filled quesadilla in the skillet. Cook for about 3-4 minutes on each side until golden brown and the cheese is melted.

    Remove the quesadilla from the skillet and let it cool slightly. Repeat the process with the second tortilla and remaining filling.

Serving

    Plate the Quesadilla

    Cut the quesadillas into wedges and place them on a serving plate. Serve alongside a portion of Spanish rice, topped with shredded lettuce, diced tomatoes, and a dollop of sour cream.
