Chicken Marinade

Prepare the Marinade
In a medium bowl, combine olive oil, lime juice, minced garlic, cumin, salt, and black pepper. Stir until well mixed.

Marinate the Chicken
Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
Chipotle Sauce

Make the Chipotle Sauce
In a blender, combine the chipotle peppers, sour cream, mayonnaise, lime juice, garlic powder, and salt. Blend until smooth. Adjust seasoning with more salt if necessary.
Rice and Beans

Cook the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add the white rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 18 minutes or until the rice is cooked and water is absorbed.

Prepare the Beans
In a small saucepan, heat the drained black beans over medium heat. Stir in chopped cilantro and season with salt to taste. Heat until warmed through.

Serve
Once grilled, remove chicken from the grill and let it rest for a few minutes. Top each chicken breast with the homemade chipotle sauce and serve alongside the rice and beans.
