Method
Marinating the Chicken
- 1
- 2
Marinate the Chicken
Cut the chicken breasts into strips and add them to the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
Cooking the Rice
- 3
Prepare the Rice
In a saucepan, combine 1 cup of long-grain white rice, 2 cups of water, and 0.5 teaspoon of salt.
- 4
Cook the Rice
Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes, or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for another 5 minutes.
Making the Cheese Dip Sauce
- 5
Combine Ingredients
In a saucepan over low heat, combine shredded cheddar cheese, cream cheese, and milk. Stir continuously until melted and smooth.
- 6
Add Flavor
Stir in diced jalapeños, garlic powder, and salt to taste. Keep warm over low heat, stirring occasionally.
Grilling the Chicken
- 7
Assembling the Dish
- 8
Serve
Fluff the cooked rice with a fork and plate it as a base. Top with grilled chicken strips and drizzle generously with cheese dip sauce. Serve immediately.
