Enchilada Filling Preparation

    Mix the Filling Ingredients

    In a large bowl, combine the cooked rice, rinsed and drained black beans, corn kernels, shredded cheese, and taco seasoning. Mix well until all ingredients are evenly combined.

Enchilada Assembly

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Tortillas

    Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side. This will make them more pliable for rolling.

    Fill the Tortillas

    Spoon about 1/4 cup of the filling mixture onto the center of each tortilla. Roll the tortillas tightly around the filling and place them seam-side down in a greased baking dish.

    Add the Enchilada Sauce

    Pour the enchilada sauce evenly over the rolled tortillas, making sure they are well covered.

    Bake

    Bake in the preheated oven for about 20 minutes, or until the enchiladas are heated through and the cheese is melted and bubbly.

    Serve

    Allow the enchiladas to cool for a few minutes. Serve with sour cream and garnish with chopped fresh cilantro as desired.
