Taco Assembly
Method
Marinating the Chicken
- 1
Prepare the Marinade
In a medium bowl, combine the olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Whisk together until well mixed.
- 2
Marinate the Chicken
Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Grilling the Chicken
- 3
Preheat the Grill
Preheat your grill to medium-high heat, about 400°F (200°C).
- 4
Grill the Chicken
Remove the chicken from the marinade and discard the marinade. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- 5
Rest the Chicken
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing into thin strips.
Assembling the Tacos
- 6
Warm the Tortillas
While the chicken is resting, warm the corn tortillas on the grill for about 30 seconds on each side, or until pliable.
- 7
- 8
Serve
Serve the tacos immediately, with additional salsa on the side if desired.
