Preheat the Oven
Preheat your oven to 375°F (190°C) to prepare for baking the enchiladas.

Warm the Tortillas
In a skillet or microwave, warm the corn tortillas slightly to make them pliable, about 20-30 seconds in the microwave.
Filling the Tortillas

Assemble the Filling
In a bowl, mix the shredded cheese and refried beans until well combined.

Fill the Tortillas
Take each warmed tortilla and spoon about 2 tablespoons of the cheese and bean mixture into the center. Roll the tortilla tightly around the filling and place it seam-side down in a baking dish.
Saucing and Baking

Add Red Sauce
Once all tortillas are filled and placed in the baking dish, pour the red enchilada sauce evenly over the top of the enchiladas.

Bake
Sprinkle any remaining cheese on top, then cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.
Serving

Garnish and Serve
Remove from the oven and let cool for a few minutes. Top with sour cream, chopped cilantro, and sliced jalapeños as desired. Serve hot.
