    Prepare Tortillas

    In a skillet, heat olive oil over medium heat. Fry each corn tortilla until crispy, about 2-3 minutes on each side. Drain on paper towels.

    Assemble Chalupa

    Spread refried beans on each crispy tortilla. Top with shredded lettuce, diced tomatoes, and shredded cheese. Add a dollop of sour cream on top.

Enchilada

    Prepare Chicken Filling

    In a bowl, mix shredded chicken with chopped onions and 1 cup of enchilada sauce.

    Assemble Enchiladas

    Preheat the oven to 350°F (175°C). In a baking dish, spread a thin layer of enchilada sauce. Fill each corn tortilla with the chicken mixture, roll them up, and place seam-side down in the baking dish. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.

    Bake Enchiladas

    Cover the baking dish with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.

    Cook Rice

    In a medium pot, combine rice, chicken broth, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed.

    Once cooked, fluff rice with a fork and stir in chopped cilantro and lime juice.

Beans

    Cook Beans

    In a skillet, heat olive oil over medium heat. Add chopped onions and cook until translucent, about 3-4 minutes. Stir in black beans, cumin, and salt. Cook until heated through.
