Beef Burrito

Beef Burrito

    Cook the Beef

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.

    Season the Beef

    Add taco seasoning to the beef, mixing well. Add a small amount of water (about 1/4 cup) and stir until combined. Cook for an additional 2-3 minutes.

    Assemble the Burrito

    Lay out a flour tortilla, add a portion of the seasoned beef, sprinkle with shredded cheese, add some diced tomato, shredded lettuce, and a dollop of sour cream. Fold in the edges and roll it tightly.

Mexican Rice

    Sauté Onions and Garlic

    In a medium saucepan, heat a little olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and sauté for an additional minute.

    Cook the Rice

    Add rice to the saucepan and stir for about 2 minutes. Pour in chicken broth and tomato sauce, and bring to a boil. Reduce heat to low, cover, and simmer for about 20 minutes, or until rice is tender.

    Finish the Rice

    Add chopped cilantro, salt, and pepper to taste. Fluff with a fork before serving.

Fried Beans

    Add canned pinto beans (drained and rinsed) to the skillet. Add cumin, salt, and pepper to taste. Cook for about 10 minutes, stirring occasionally and mashing the beans slightly.

    Cook until heated through and slightly thickened. Adjust seasoning if necessary before serving.
