Assemble Enchiladas
Soften corn tortillas by lightly frying them in a pan for about 10 seconds on each side. Spread a spoonful of the chicken mixture on each tortilla, roll them up, and place them seam side down in a greased baking dish.

Add Sauce and Cheese
Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese. Bake in the preheated oven for 20 minutes until the cheese is bubbly.

Garnish
Once out of the oven, drizzle sour cream on top and garnish with chopped cilantro.
For Chalupas

Make Chalupa Dough
In a bowl, combine masa harina and water. Mix well until a soft dough forms. Divide the dough into 8 equal pieces and shape each into a disc.

Cook Chalupas
Heat a skillet over medium heat. Cook each disc for about 2-3 minutes on each side until lightly browned and firm.

Assemble Chalupas
Spread a layer of refried beans on each chalupa base. Top with shredded lettuce, diced tomatoes, sliced jalapeños, and sour cream.

Prepare Quesadillas
In a skillet, heat olive oil or butter over medium heat. Place a flour tortilla in the skillet. Sprinkle half of the tortilla with 1 cup of shredded cheese and optional cooked chicken or beef.

Cook Quesadillas
Fold the tortilla over the filling and cook for about 2-3 minutes on each side until the cheese is melted and the tortilla is golden brown.

Slice and Serve
Remove from skillet and let cool for a minute before slicing into wedges. Serve warm with salsa or additional sour cream.
