Burrito Preparation

    Prepare the Filling

    In a bowl, combine the cooked rice, black beans, shredded cheese, sour cream, salsa, cooked chicken, and chopped cilantro. Mix well.

    Assemble the Burrito

    Lay a flour tortilla flat and place a scoop of the filling in the center. Fold the sides over the filling, then roll from the bottom up to form a burrito. Repeat with remaining tortillas.

    Prepare the Filling

    In a bowl, mix the cooked ground beef or chicken with chopped onions.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). Spread a thin layer of enchilada sauce in a baking dish. Fill each corn tortilla with the meat mixture, roll them up, and place them seam-side down in the dish. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.

    Bake the Enchiladas

    Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly.

    Prepare the Rice or Beans

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the white rice, salt, and 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until the rice is cooked.

    For Beans Option

    If you prefer beans, simply heat the black beans in a saucepan over medium heat, adding salt to taste.
