Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a double boiler or microwave, melt the semisweet chocolate and unsalted butter together. Stir until smooth and combined.

Batter Mixing

  1. 3

    Combine Sugar and Eggs

In a mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale.

  2. 4

    Add Chocolate Mixture

Slowly pour the melted chocolate and butter mixture into the egg mixture, whisking continuously until fully incorporated.

  3. 5

    Mix in Vanilla and Flour

Add the vanilla extract, all-purpose flour, and a pinch of salt to the batter. Mix gently until just combined.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

Serving

  1. 8

    Cool and Invert

Remove the cakes from the oven and let them cool for 1 minute. Carefully run a knife around the edges and invert each ramekin onto a plate.

  2. 9

    Garnish and Serve

Dust the tops with powdered sugar and serve warm with a scoop of vanilla ice cream.
