Cooking the Pork Carnitas

    Prepare the Pork

    Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and minced garlic. Set aside.

    Cook the Pork

    In a large pot or Dutch oven, heat the lard or vegetable oil over medium-high heat. Add the seasoned pork and sear on all sides until browned, about 10 minutes.

    Add Liquid and Simmer

    Once the pork is browned, add the orange juice, bay leaves, and sliced onion. Bring to a simmer, cover, and reduce the heat to low. Cook for 2-3 hours or until the pork is very tender.

    Shred the Pork

    Remove the pork from the pot and shred it using two forks. Set aside, retaining some of the cooking liquid.

    Crisp the Carnitas

    In the same pot, increase the heat to medium-high and add the shredded pork back to the pot. Cook until the pork is crispy, about 10-15 minutes, stirring occasionally and adding some reserved cooking liquid as needed.

    Heat the Refried Beans

    In a small pot, heat the refried beans over low heat until warmed through, stirring occasionally.

    Prepare the Toppings

    Chop the lettuce and onion finely. Prepare the guacamole if not store-bought.

    Warm the Tortillas

    In a skillet or on a comal, warm the flour tortillas for about 30 seconds on each side until pliable.

    Assemble the Lunch

    To serve, place a portion of carnitas on a heated tortilla, add refried beans, top with lettuce, onion, and a generous scoop of guacamole. Roll up the tortilla and enjoy!
