    In a large skillet, heat the olive oil over medium heat.

    Sauté Onions and Garlic

    Add diced onion and minced garlic to the skillet. Sauté for about 2-3 minutes until the onion becomes translucent.

    Add diced red bell pepper and zucchini to the skillet. Cook for an additional 4-5 minutes until the vegetables are tender.

    Mix in Remaining Ingredients

    Stir in the corn kernels, black beans, ground cumin, chili powder, salt, and black pepper. Mix well and cook for another 2-3 minutes until heated through.

    Remove from heat and set aside.

Enchilada Assembly

    Preheat your oven to 375°F (190°C).

    Spread a thin layer of enchilada sauce on the bottom of a baking dish.
