Preparation

    Prepare the Marinade

    In a bowl, mix together the olive oil, lime juice, minced garlic, chili powder, cumin, paprika, salt, and black pepper.

    Marinate the Meats

    Divide the marinade into three separate bowls. Add the steak, chicken, and shrimp into their respective bowls and ensure they are well-coated. Let marinate for at least 30 minutes.

    Prepare the Vegetables

    Slice the onion and bell peppers into thin strips.

Cooking

    Grill the Steak

    Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and grill for about 4-5 minutes per side, or until cooked to your desired doneness. Remove from grill and let rest before slicing.

    Grill the Chicken

    On the same grill, add the marinated chicken. Grill for about 6-7 minutes per side, or until fully cooked. Remove and let rest before slicing.

    Grill the Shrimp

    Grill the shrimp for about 2-3 minutes on each side or until they are pink and opaque. Remove from the grill.

    Grill the Vegetables

    Add the sliced onions and bell peppers to the grill. Grill for about 5-7 minutes until they are tender and slightly charred.

Serving

    Assemble the Trio

    Slice the grilled steak and chicken into strips. Arrange the steak, chicken, and shrimp on a hot skillet with the grilled onions and peppers.

    Serve with Tortillas and Sides

    Serve immediately with warm corn or flour tortillas and sides of sour cream, guacamole, and pico de gallo.
