Mix Dry Ingredients
In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of salt. Whisk together until well combined.

Add 1 tablespoon of vegetable oil and 3 tablespoons of warm water to the dry mixture. Stir with a spoon until a dough begins to form.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.

Cover the dough with a clean kitchen towel and let it rest for 20 minutes.
Frying the Sopapillas

In a deep frying pan or pot, heat 2 cups of vegetable oil over medium heat until hot (about 350°F or 175°C).

After resting, roll out the dough on a lightly floured surface to about 1/4 inch thick.

Cut the rolled dough into squares or triangles. Carefully place them into the hot oil, frying them until they puff up and turn golden brown, about 1-2 minutes on each side.
