1. Mix Dry Ingredients
In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of salt. Whisk together until well combined.
2. Add Wet Ingredients
Add 1 tablespoon of vegetable oil and 3 tablespoons of warm water to the dry mixture. Stir with a spoon until a dough begins to form.
3. Knead the Dough
Transfer the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.
4. Rest the Dough
Cover the dough with a clean kitchen towel and let it rest for 20 minutes.
Frying the Sopapillas
5. Heat Oil
In a deep frying pan or pot, heat 2 cups of vegetable oil over medium heat until hot (about 350°F or 175°C).
6. Roll Out the Dough
After resting, roll out the dough on a lightly floured surface to about 1/4 inch thick.
7. Cut and Fry
Cut the rolled dough into squares or triangles. Carefully place them into the hot oil, frying them until they puff up and turn golden brown, about 1-2 minutes on each side.
8. Drain Excess Oil
Once golden brown, use a slotted spoon to remove the sopapillas from the oil and drain on paper towels.

9. Sugar and Cinnamon Coating
In a small bowl, mix together 1 cup of sugar and 1 teaspoon of cinnamon. Sprinkle or toss the warm sopapillas in the mixture to coat.
