Prepare Enchiladas

Cook Ground Beef
In a skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat.

Season Beef
Add taco seasoning to the cooked beef and stir to combine. Cook for an additional 2-3 minutes, then remove from heat.

Prepare Tortillas
Preheat the oven to 350°F (175°C). Heat the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.

Assemble Enchiladas
Take a tortilla, add a small amount of the beef mixture, some chopped onions, and a sprinkle of cheese. Roll the tortilla tightly and place it seam-side down in a greased baking dish. Repeat with remaining tortillas.

Add Sauce and Cheese
Pour enchilada sauce over the rolled tortillas in the baking dish, then top with the remaining cheese.

Bake
Bake in the preheated oven for about 20 minutes, or until the cheese is bubbly and slightly golden.
