Prepare the Steak

    Season and Grill the Steak

    Season the flank steak with salt and black pepper on both sides. Preheat a grill or stovetop grill pan over medium-high heat. Grill the steak for about 5-7 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for 5 minutes before slicing.

Prepare the Vegetables

    Sauté the Vegetables

    While the steak is resting, slice the bell peppers, onion, and jalapeño (if using). Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced vegetables and sauté for about 5-7 minutes, or until they are tender and slightly caramelized. Remove from heat and set aside.

Assemble the Quesadillas

    Combine Ingredients

    Slice the rested steak thinly against the grain. In a large tortilla, layer 1/2 cup of shredded cheese, a portion of sliced steak, and a portion of sautéed vegetables. Top with another 1/2 cup of cheese, and then place another tortilla on top.

Cook the Quesadillas

    Grill the Quesadillas

    In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Place the assembled quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted. Repeat with the remaining quesadillas.

    Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with sour cream and salsa on the side.
