    Prepare the Chicken

    Trim any excess fat from the chicken breast and cut it into thin strips.

    Julienne the bell peppers and onion into thin strips.

Cooking

    In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chicken strips and season with fajita seasoning, salt, and black pepper. Cook for about 5-7 minutes until fully cooked and no longer pink. Remove chicken from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add another tablespoon of olive oil. Add the sliced bell peppers and onion. Sauté for about 4-5 minutes until the vegetables are tender and slightly caramelized.

    Return the cooked chicken to the skillet with the sautéed vegetables. Stir to combine and heat through for another 2 minutes.

Assembling and Cooking Quesadillas

    Assemble the Quesadilla

    Lay one flour tortilla on a clean surface. Sprinkle 1/2 cup of shredded cheese on one half of the tortilla. Top with a portion of the chicken and vegetable mixture, then sprinkle another 1/2 cup of cheese on top. Fold the tortilla over to cover the filling.

    Cook the Quesadilla

    Heat a non-stick skillet over medium heat. Place the assembled quesadilla in the skillet and cook for about 3-4 minutes on each side until golden brown and the cheese has melted. Repeat with remaining tortillas and filling.
