Preparing the Fajitas

Marinate the Meat
In a bowl, combine the flank steak or chicken breast with olive oil and fajita seasoning. Mix well to coat the meat evenly. Allow it to marinate for at least 30 minutes.

Grill the Vegetables
Slice the bell peppers and onion into thin strips. Heat a grill pan over medium-high heat and add a tablespoon of olive oil. Add the sliced vegetables and grill until tender, about 5-7 minutes. Remove from heat and set aside.

Assembling the Chimichangas

Fill the Tortillas
Lay out each flour tortilla on a flat surface. In the center of each tortilla, place a portion of grilled meat, grilled vegetables, and a sprinkle of shredded cheese.

Fold and Roll
Fold the sides of the tortilla inwards and then roll it up from the bottom to the top, ensuring that the filling is securely wrapped inside.

Fry the Chimichangas
In a deep frying pan, heat vegetable oil over medium heat. Carefully place the rolled chimichangas seam-side down into the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Place the fried chimichangas on a serving plate. Serve with sour cream and your choice of sauce on the side.
