Prepare Carnitas

    Rub the pork shoulder with salt, black pepper, cumin, garlic powder, onion powder, and oregano evenly over the surface.

    Place the seasoned pork shoulder into a slow cooker. Add lime juice and water, then cover and cook on low for 8 hours or until the pork is tender and easily shreds.

    Once cooked, remove the pork from the slow cooker and let it cool slightly. Shred the pork with two forks and set aside.

Assemble Enchiladas

    Preheat your oven to 375°F (190°C).
