Prepare the Filling
In a mixing bowl, combine the refried beans, shredded cheese, chopped onion, ground cumin, and salt. Mix until all ingredients are well combined.

Assemble the Chimichangas
Lay out each flour tortilla on a clean surface. Spoon approximately 1/4 of the filling mixture onto the center of each tortilla. Fold the sides over the filling and then roll the tortilla from the bottom up to enclose the filling tightly. Secure with a toothpick if necessary.

Heat the Oil
In a large, deep skillet, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of tortilla; it should sizzle immediately.

Fry the Chimichangas
Carefully add the chimichangas to the hot oil, a few at a time, without overcrowding. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Use tongs to turn them as needed.

Drain the Chimichangas
Once golden brown, remove the chimichangas from the oil and place them on paper towels to drain any excess oil.

Serve the chimichangas hot, topped with a dollop of sour cream and your choice of sauce or salsa. Enjoy!
