    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt the butter over medium heat. Stir in the flour and cook for about 1 minute, stirring continuously. Gradually whisk in the milk and cook until the mixture thickens.

    Combine

    Reduce the heat to low, add the cheese, salt, pepper, and paprika to the sauce. Stir until the cheese is melted and smooth. Add the cooked macaroni and mix well.

Soup

    Sauté the Vegetables

    In a large pot, heat a little oil over medium heat. Add the diced onions, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.

    Add Broth and Seasonings

    Add the minced garlic, thyme, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 15-20 minutes.

    Finish the Soup

    If using, add the cooked pasta in the last few minutes of cooking to warm through. Adjust seasoning to taste.
