Prepare the Onions
Peel the onions and slice them into 1/4 inch thick rings. Separate the rings and set aside.

Make the Batter
In a bowl, combine all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Mix well.

Add Water
Gradually add the ice-cold water to the dry ingredients, whisking until the batter is smooth and thick enough to coat the onion rings. Let it rest for about 15 minutes.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Onion Rings
Dip each onion ring into the batter, allowing excess batter to drip off. Carefully place them in the hot oil and fry in batches until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
Dipping Sauce

Prepare the Dipping Sauce
In a small bowl, mix together mayonnaise, ketchup, hot sauce, garlic powder, and salt to taste. Stir until well combined.

Serve the crispy onion rings hot with the dipping sauce on the side.
