Preparation of Potatoes

    Peeling and Cutting

    Peel the russet potatoes and cut them into uniform sticks about 1/4 inch thick. Try to keep them as consistent as possible for even cooking.

    Soak the cut potatoes in a bowl of cold water for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

    Drying

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel. Removing moisture is key to achieving crispiness.

Frying the Potatoes

    Heating the Oil

    In a large, heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to monitor the temperature for best results.

    Frying

    Carefully add a batch of the dried potato sticks to the hot oil, ensuring not to overcrowd the pot. Fry for about 5-7 minutes or until they turn golden brown.

    Once the fries are golden, remove them using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
