    Wash the Russet potatoes thoroughly under cold water to remove any dirt. Peel the potatoes if desired, then cut them into even sticks about 1/4 to 1/2 inch thick.

    Place the cut potato sticks in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch. This step helps in achieving crispier fries.

    After soaking, drain the potatoes and lay them out on a clean kitchen towel or paper towels. Pat them dry completely to remove moisture.

    In a large, deep pot or a deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for accuracy.
