Slice the Onions
Peel the onions and slice them into 1/4 inch thick rings. Carefully separate the rings and set them aside.

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Mix well. Gradually add the cold sparkling water while whisking until the batter is smooth and has a slightly thick consistency.
Frying
Heat the Oil
In a deep pot or fryer, heat the oil to 350°F (175°C). Use a thermometer to ensure the temperature is accurate.
Coat the Onion Rings
Dip each onion ring into the batter, making sure it is fully coated. Allow any excess batter to drip off.
Fry the Onion Rings
Carefully place the coated onion rings in the hot oil in batches, without overcrowding. Fry for about 2-3 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them and place them on paper towels to drain excess oil.
Serve
Serve the crispy onion rings immediately while hot. They can be enjoyed on their own or with your favorite dipping sauces.
