Method

Preparation of Fish

  1. 1

    Clean and Season the Fish

Clean the whole yellow tail snapper thoroughly. Pat it dry with paper towels. Rub salt and black pepper all over the fish, both inside and out.

  2. 2

    Dredge the Fish

Coat the fish evenly with all-purpose flour, shaking off excess flour.

Frying the Fish

  1. 3

    Heat the Oil

In a large skillet, heat vegetable oil over medium-high heat until hot.

  2. 4

    Fry the Fish

Carefully place the coated fish in the hot oil. Fry for about 5-7 minutes on each side or until the skin is golden brown and crispy. Remove the fish from the skillet and let it drain on paper towels.

Making the Thai Mango Sauce

  1. 5

    Combine Ingredients

In a bowl, mix together the diced mango, lime juice, fish sauce, chopped red chili, and cilantro. Adjust seasoning to taste.

Preparing Green Beans

  1. 6

    Sauté the Green Beans

In a separate skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add green beans, salt, and black pepper. Sauté for about 5-7 minutes until the beans are tender yet crisp.

Cooking Coconut Rice

  1. 7

    Cook the Rice

In a saucepan, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and liquid is absorbed.
